Barbecue picks from the experts
September 01, 2006 in Kitchen Tips and Gadgets, More Healthy Cooking Resources
The August 2006 issue of
Cooking Light asked the experts about their favourite barbecue tips and accessories.
Steven Raichlen, author of
The Barbecue Bible and
Raichlen on Ribs, Ribs, Outrageous Ribs likes the
Rib Rack for roasting ribs on a charcoal grill. Guy Rubino, executive chef and co-owner of Rain Restaurant in Toronto and host of Made to Order on the Fine Living network selects
Cedar Roasting Planks . These planks provide a smoky flavour to grilled foods, and the plank can be marinated to release flavourful steam during cooking. Bobby Flay, chef and owner of Mesa Grill in NYC and Vegas, as well as Bar Americain and BOLO in NYC, recommends
Logic Pro Grid/Iron Griddle . This cast iron griddle is great for indoor grilling.
Cooking Light also noted their own great find: Progressive Internationals
silicone basting brush which withstands high temperatures, is easier to clean than traditional brushes, and has almost 50 thin, flexible bristles. These bristles are what make this basting brush unique more bristles means it can hold more liquid and distribute it more evenly. And, the brushs collar keeps the bristles off the counter.
