Lentil Chili Con Carne

Lentils help to stretch the meat as well as adding fibre in this recipe. 

Ingredients

1 lb. lean ground beef
medium onion, chopped
clove garlic, minced
1-19oz. can tomato sauce
1 cup cooked lentils
1 1/4 cups whole small button mushrooms
1/2 cup water
1 tbsp chili powder
1/2 tsp black pepper
1 tbsp white vinegar

Directions

1. In a heavy skillet, brown beef with onion and garlic. Drain off excess fat. 2. Add tomato sauce, lentils, mushrooms, water, chili powder and pepper. Bring to a boil, reduce heat and simmer, covered for 1 hour. 3. Add vinegar and simmer another 15 minutes.
