Creamy Cold Berry Soup

As a dessert, starter, snack, or even breakfast – this soup is a colourful addition to any meal.  Depending on that you have in your fridge - just about any type of berry can be used, including strawberries, blueberries, raspberries and blackberries.

Ingredients

2 cups fresh strawberries, washed and trimmed
pear, peeled
1/2 cup  blueberries
1/2 cup  pomegranate juice
1 1/2 cup  low fat plain yogurt

Directions

In batches, blend strawberries, pear, blueberries, pomegranate juice and yogurt.  Combine blended ingredients in a large bowl, refrigerate until ready to serve.

Garnish with sprigs of fresh mint.

Serve cold.

Per 1 cup (250 ml) serving: 127 cal, 5 g pro, 1 g total fat (0 g sat. fat), 26 g carb, 4 g fibre, 2 mg chol, 69 mg sodium
