Avocado and Fruit Salad Topping

Avocado adds a touch of colour and extra nutrients to any salad. The lemon juice keeps the apples from turning brown. Serve this topping on waffles, pancakes or even mixed greens.

Ingredients

red delicious apples, cut into 1/2 cubes
1 tsp lemon juice
ripe fresh California Avocados, cut into 1/2 inch cubes
kiwi fruits, sliced
banana, sliced
1 pint strawberries, sliced
1 pint  blueberries
5 tbsp honey
1/4 tsp mace (East Indian spice similar to nutmeg)

Directions

1. In a large bowl, add apples and toss with lemon juice until coated. 2. Add avocado, kiwifruit, banana, strawberries, blueberries, honey and mace. 3. Gently mix until well combined. 4. Serve immediately. Makes 4 servings.
