California Confetti Pizza

This is the ultimate in fresh and fabulous.

Ingredients

avocado, peeled, pitted and diced
2 tbsp fresh lemon juice
12-inch, pre-baked pizza shell
1 tbsp olive oil (plus more if needed)
6 cloves garlic, chopped finely
1/2 cup tomatillo or tomato salsa
1/2 cup corn kernels, fresh or canned
1/2 cup thinly sliced green onion
1/4 cup chopped mild green chile such as Anaheim
1/4 cup chopped red bell pepper
1 cup (4 oz.) Feta cheese
1 tbsp chopped fresh oregano or 1 tsp dried

Directions

1. Preheat oven to 450�F. 2. In a medium bowl, gently toss avocado with lemon juice. Set aside. 3. Brush pizza bread shell with olive oil. Sprinkle with garlic. 4. Spread salsa over shell. Sprinkle evenly with corn, green onion, chile, bell pepper, avocado, cheese and oregano. 5. Drizzle with 1 tablespoon olive oil. 6. Bake until cheese is lightly browned, about 10 minutes. Makes 4 servings. Nutrition Information per serving: 270 calories, 12g total fat, 15mg cholesterol, 530mg sodium, 10g protein.
