Lemon Hummus

This creamy, high fibre dip is a crowd pleaser – serve it with raw vegetables or whole-grain crackers.  It’s also a delicious spread on burgers and sandwiches.

Lemon Hummus

Ingredients

Quantity Ingredients
1 19 oz/540 ml can chickpeas, drained and rinsed well
1/3 cup / 75 ml tahini
1/4 cup / 50 ml freshly squeezed lemon juice
2 tbsp / 25 ml extra virgin olive oil
1 tbsp / 15 ml water
1/4 tsp / 1 ml coarse sea salt

Directions

In a food processor or blender, combine chickpeas, tahini, lemon juice, olive oil, water and salt; pulse to a smooth consistency.

Makes 1.5 cups (375 ml).

Serves 6. Per 1/4 cup (50 ml) serving: 205 calories, 7 g protein, 13 g total fat (2 g saturated fat), 18 g carbohydrate, 4 g fibre, 0 mg cholesterol, 117 mg sodium
