Almond & Berry Yogurt Breakfast Parfait

Breakfast, Desserts.
Use Greek yogurt for extra protein. Or, substitute some of the yogurt with kefir to boost your prebiotic intake. This recipe can also double as a healthy dessert.

Almond & Berry Yogurt Breakfast Parfait


Quantity Ingredients
2 cups / 500 ml 1% MF or less yogurt, plain or vanilla
1 tbsp / 15 ml honey
1 tbsp / 15 ml lemon zest
2 cups / 500 ml mixed fresh berries, such as blueberries, sliced strawberries and/or raspberries
1/2 cup / 125 ml slivered almonds, toasted


In a small bowl, whisk together yogurt, honey and zest.

In 4 parfait glasses (or tall glass) layer berries, almonds and yogurt mixture. Garnish with fresh mint leaves if desired.

Refrigerate until ready to serve.

Serves 4.
