Almond & Berry Yogurt Breakfast Parfait

Breakfast, Desserts.
Use Greek yogurt for extra protein. Or, substitute some of the yogurt with kefir to boost your prebiotic intake. This recipe also doublea as a healthy dessert.

Almond & Berry Yogurt Breakfast Parfait


Quantity Ingredients
2 cups / 500 ml 1% MF or less yogurt, plain or vanilla
1 tbsp / 15 ml honey
1 tbsp / 15 ml lemon zest
2 cups / 500 ml mixed fresh berries, such as blueberries, sliced strawberries and/or raspberries
1/2 cup / 125 ml slivered almonds, toasted


In a small bowl, whisk together yogurt, honey and zest.

In 4 parfait glasses (or tall glass) layer berries, almonds and yogurt mixture. Garnish with fresh mint leaves if desired.

Refrigerate until ready to serve.

Serves 4.
