Almond & Berry Yogurt Breakfast Parfait

Breakfast, Desserts, Snacks.
Use Greek yogurt for extra protein. You can also substitute some of the yogurt with kefir to boost your probiotic intake. This parfait is also a tasty mid day snack or dessert.

Almond & Berry Yogurt Breakfast Parfait


Quantity Ingredients
2 cups / 500 ml plain Greek yogurt, 2% MF or less
1 tbsp / 15 ml honey
1 tbsp / 15 ml lemon zest
2 cups / 500 ml mixed fresh berries, such as blueberries, sliced strawberries and/or raspberries
1/2 cup / 125 ml slivered almonds, toasted


In a small bowl, whisk together yogurt, honey and lemon zest.

In 4 parfait glasses (or tall glass) layer berries, almonds and yogurt mixture.

Refrigerate until ready to serve. Garnish with fresh mint leaves if desired.

Serves 4.
