Amaranth Pancakes or Muffins


Quantity Ingredients
1/2 cup Amaranth Flour
1/2 cup White Rice Flour
1 tsp Baking Soda
1 tsp Cream of Tartar
1 tsp Arrowroot Starch
1/2 tsp Apple Pie Spice
1/2 Apple, peeled & chopped
1/2 cup Applesauce
1/3 cup Frozen Apple Juice Concentrate, thawed
2 Egg Whites (Dried)
4-6 Tbsp Water


In a medium bowl, mix applesauce, apple juice concentrate, prepared egg whites and water. In a small bowl, stir together amaranth flour, baking soda, cream of tartar, arrowroot and apple pie spice; add to applesauce mixture and stir until blended.

Spray nonstick skillet or griddle with nonstick cooking spray; heat skillet over medium heat, or follow manufacturer's directions if using griddle. Pour scant 1/4 cup of batter onto hot skillet for each 4'' pancake; cook until golden brown on one side, about 2 minutes.

When pancakes have bubbly surfaces and slightly dry edges, flip them over and cook 1-2 minutes more, or until done.
