Applesauce Oat Loaf

Breakfast.
This dense quick bread is packed with oats and is incredibly moist thanks to the applesauce.  Enjoy it as a mid-afternoon snack or as a quick breakfast during the week. I like to eat it with apple butter or, sometimes, almond butter.

Applesauce Oat Loaf

Ingredients

1 cup / 250 ml all-purpose flour
1/2 cup / 125 ml whole wheat flour
1.5 cups / 375 ml large-flake rolled oats
1 tsp / 5 ml baking powder
1 tsp / 5 ml baking soda
1 tsp / 5 ml cinnamon
1/2 tsp / 2 ml allspice
1 cup / 250 ml unsweetened applesauce
1/2 cup / 125 ml brown sugar
1/3 cup / 75 ml canola oil
2 medium eggs
1.5 tsp / 7 ml vanilla extract
1 tbsp / 15 ml large-flake rolled oats

Directions

Preheat oven 350°F (180°C)

Grease and flour a 9 x 5 inch (2 L) loaf plan.

In a large mixing bowl, combine all-purpose flour, whole wheat flour, oats, baking powder, baking soda, cinnamon and allspice.

In a separate bowl, whisk together applesauce, brown sugar, canola oil, eggs and vanilla.

Add wet ingredients to dry ingredients; mix until combined. Pour batter into prepared loaf pan and sprinkle top with 1 tbsp (15 ml) of oats.

Bake for 30 minutes, or until bread is cooked through (when a knife inserted in the centre comes out clean).

Nutrition: Per 3/4-inch (2 cm) slice: 223 cal, 5 g pro, 8 g total fat (1 g saturated fat), 34 g carb, 3 g fibre, 27 mg chol, 145 mg sodium.
