Artichoke and Shrimp Pasta Salad

A colorful and delicious salad that is perfect for lunches or summer picnics. 

 Artichoke and Shrimp Pasta Salad


Quantity Ingredients
1 lb tri-colored pasta, cooked al dente, drained
2 cups cooked baby artichokes, diced
8 oz. cooked baby shrimp or chopped cooked shrimp
1 red bell pepper, seeded and chopped
3 green onions, chopped
2 tbsp parsley, chopped
prepared or bottled vinaigrette dressing
lettuce leaves


Toss all ingredients except lettuce leaves with the vinaigrette dressing.

Serve on lettuce leaves.
