Banana, Pear & Peanut Salad

Make this recipe as close to serving time as possible since cut pears begin to brown if they sit out too long. Luckily, it takes only 15 minutes to throw together. This salad can also be served as a delicious fruit dessert. 

Banana, Pear & Peanut Salad

Ingredients

1/3 cup honey
1/2 tsp grated lime zest
3 tbsp fresh lime juice
1/4 tsp salt
1/8 tsp ground allspice
1/8 tsp nutmeg
1 pound bananas, thinly sliced
1 pound Bartlett or Bosc pears, cut into 1/2-inch chunks
1/4 cup dry-roasted peanuts, coarsely chopped

Directions

1. In a large bowl, whisk together the honey, lime zest, lime juice, salt, allspice and nutmeg. 2. Add the bananas, pears and peanuts, tossing to combine. Serve at room temperature.
