|1-1/2 cups||ripe bananas, mashed|
|3 tbsp||vanilla soymilk|
|1-1/2 cups||all-purpose flour|
|1/2 cup||soy flour|
|1 tsp||baking soda|
|1/2 cup||roasted soynuts, coarsely chopped|
Preheat oven to 350 F. Coat a 9" x 5" loaf pan with vegetable oil cooking spray.
In a large bowl, mix margarine, sugar, egg whites, banana and soymilk with electric mixer. Add all-purpose and soy flours, baking soda and salt. Mix well.
Stir in soynuts. Pour batter into prepared pan. Bake 1 hour or more, until knife inserted in middle comes out clean.
