Broccoli, Cauliflower, and Carrot Salad


Quantity Ingredients
1/2 cup light mayonnaise
1 tbsp sugar
2 tbsp rice wine vinegar
1 tsp salt
1/2 tsp ground ginger
1 package (1 1/2 cups) pre-washed broccoli and cauliflower florets blend, coarsely chopped
1 package (1 cup) shredded carrots
1/2 cup roasted peanuts, chopped


Whisk together first 5 ingredients in a large bowl. Add broccoli mixture and carrots, tossing to coat. Sprinkle evenly with nuts.  Serves 6.
