Brown Rice and Lentil Casserole


Quantity Ingredients
1/2 cup Dry white wine
1.5 cup vegetable or chicken stock
1/2 cup dried lentils (green or brown)
1/2 cup uncooked brown rice
1 cup stewed tomatoes
1 medium onion, chopped
1 garlic clove, minced
1/4 tsp dried thyme
1 small bay leaf
1/4 tsp dried basil
Amount salt and pepper to taste
1/2 cup shredded cheddar or Swiss cheese


Preheat over to 350°F.

In a 6 cup (1.5 L) casserole dish, combine all ingredients except cheese.  Cover with lid or foil. 

Bake for 1.5 hours.  Stir 2 or 3 times during baking. 

Sprinkle cheese on top and bake for another 5 minutes.
