1/2 cup | dried lentils (green or brown) |
1/2 cup | uncooked brown rice |
1 cup | stewed tomatoes |

1/4 tsp | dried thyme |
1 | small bay leaf |
1/4 tsp | dried basil |
Amount | salt and pepper to taste |
1/2 cup | shredded cheddar or Swiss cheese |
Directions
Preheat over to 350°F.
In a 6 cup (1.5 L) casserole dish, combine all ingredients except cheese. Cover with lid or foil.
Bake for 1.5 hours. Stir 2 or 3 times during baking.
Sprinkle cheese on top and bake for another 5 minutes.
