|1/2 cup||Dry white wine|
|1.5 cup||vegetable or chicken stock|
|1/2 cup||dried lentils (green or brown)|
|1/2 cup||uncooked brown rice|
|1 cup||stewed tomatoes|
|1||medium onion, chopped|
|1||garlic clove, minced|
|1/4 tsp||dried thyme|
|1||small bay leaf|
|1/4 tsp||dried basil|
|Amount||salt and pepper to taste|
|1/2 cup||shredded cheddar or Swiss cheese|
Preheat over to 350°F.
In a 6 cup (1.5 L) casserole dish, combine all ingredients except cheese. Cover with lid or foil.
Bake for 1.5 hours. Stir 2 or 3 times during baking.
Sprinkle cheese on top and bake for another 5 minutes.
