Bulgur Salad with Corn

Bulgur is an ancient grain that's coming back into fashion. Commercial fat-free Italian salad dressing adds flavour without fat. 

Bulgur Salad with Corn


Quantity Ingredients
1 cup bulgur
2 tbsp finely chopped red or Spanish onion
1 clove garlic, minced
1/2 cup cooled cooked corn kernels
1 tomato, seeded and diced
Half small zucchini, thinly sliced
1/4 cup crumbled feta cheese
1/2 cup bottled fat-free Italian dressing
pinch crushed dried basil
Salt and pepper


1. Cover bulgur with 2 cups (500 mL) boiling water; let stand 30 minutes. Drain. 2. In bowl, combine bulgur, onion, garlic, corn, tomato and zucchini. Stir in cheese, dressing and basil. 3. Season with salt and pepper to taste. 4. Cover and refrigerate at least 1 hour before serving.
