|1 cup||non-hydrogenated margarine|
|1 cup||icing sugar|
|1 tsp||ground cardamon|
|1 tsp||vanilla extract|
|2 cups||chickpea flour|
In mixing bowl, cream margarine with icing sugar. Beat in egg, cardamom and vanilla. Stir in chickpea flour and water. Batter should not be overly soft. Stir in raisins.
Drop dough by teaspoon onto cookie sheet which has been sprayed with nonstick spray. Place dough about 2-inches apart.
Place oven rack in center of oven. Bake at 300F for 12 to 15 minutes until edges are golden brown. Let cool on pan for 5 minutes before removing. Makes approximately 5 dozen cookies.
