Chocolate Cake with Crystallized Ginger

This decadent chocolate cake is delicious eaten on it's own, or topped with fresh berries.

Chocolate Cake with Crystallized Ginger

Ingredients

Quantity Ingredients
1 cup all purpose flour
1 1/2 tsp baking powder
3 tbsp cocoa
3 tbsp finely chopped crystallized ginger
1/8 tsp salt
2 eggs
2/3 cup white sugar
5 tbsp water
1 tsp vanilla extract

Directions

Preheat oven to 350°F (180°C).

Lightly grease and flour a 9-inch cake pan.

In a small bowl, combine flour, baking powder, cocoa and salt.  Set aside.

In a large mixing bowl, beat eggs for 2 minutes using an electric mixer.  Gradually add sugar and continue beating for 3 to 4 minutes, until pale yellow and fluffy.

Add water and vanilla, and mix to combine.  Add dry ingredients and continue to beat with an electric mixer for another minute.

Pour batter into prepared cake pan and bake for 25 to 30 minutes, or until a knife inserted in the centre comes out clean.

Serves 8.

Tip: Crystallized ginger is ginger that has been dried and preserved in a sugar coating.  It's slightly chewy, spicy and sweet. You can find it in the bulk section of most major grocery stores, or your local bulk food store.
