Cinnamon Pecan Baked Apples

Use a firm variety of apple that will hold its shape after cooking, such as Granny Smith, Spy or Ida Red.

Cinnamon Pecan Baked Apples


Quantity Ingredients
4 apples
1/4 cup / 50 ml brown sugar
1 tbsp / 15 ml chopped pecans
1 tsp / 5 ml cinnamon
1 tbsp / 15 ml dried cranberries or cherries
1/2 tsp / 2 ml vanilla extract


Preheat oven to 375°F (190°C).

Using an apple corer, remove most of the core of each apple, leaving about ½ inch (1 cm) at the bottom.

In a small bowl, combine, sugar, pecans, cinnamon, cranberries, and vanilla.

Place the apples in a glass baking dish.

Place equal portions of sugar mixture in the hollow centre of each apple.

Cover the bottom of the dish with ¼ inch (0.5 cm) of water.

Bake for 40 to 50 minutes or until apples are soft, but still hold their shape.

Serves 4.
