Cinnamon Stovetop Oatmeal with Fresh Berries

Breakfast.
Oats are an excellent source of soluble fibre, which helps prolong a feeling of fullness and keep LDL (bad) blood cholesterol levels in check.  This recipe uses quick oats so it’s ready in less than 10 minutes, making it a perfect breakfast even for a busy mid-week morning.  If you don’t have fresh blueberries on hand, other antioxidant-rich berries work just as well, such blackberries or raspberries.

Cinnamon Stovetop Oatmeal with Fresh Berries

Ingredients

Quantity Ingredients
1.5 cups / 375 ml water
1 tbsp / 15 ml dark brown sugar
1/4 tsp / 1 ml cinnamon
1/8 tsp / 0.5 ml vanilla extract
1/8 tsp / 0.5 ml salt
3/4 cup / 175 ml quick oats
1/2 cup / 125 ml fresh blueberries
1/2 cup / 125 ml sliced strawberries

Directions

In a saucepan stir together water, brown sugar, cinnamon, vanilla and salt.  Bring to a boil over high heat.

When water comes to a rolling boil, add oats and immediately reduce heat to low, while stirring to prevent any clumps.  Continue stirring for 1 to 2 minutes, until most of the liquid is absorbed and oats begin to thicken.

Remove from heat.  Sprinkle with fresh berries. 

Serve immediately.

Makes 2 cups (500 ml).
