Clementine-Cranberry Relish


Quantity Ingredients
2 clementines, quartered and seeded
1 cup packed brown sugar
1/2 cup fresh clementine juice
1 tbsp minced crystallized ginger
1/4 tsp ground cinnamon
1/8 tsp salt
1 package (12 oz.) fresh cranberries
Dash of ground cloves


  1. Place clementines in a food processor; process until coarsely chopped.
  2. Combine clementines, sugar, and the remaining ingredients in a medium saucepan. Bring to a boil; reduce heat, and simmer 10 minutes or until cranberries pop.
  3. Remove from heat; cool completely. Serve at room temperature.

Make 12 servings (1/4 cup each).
