Corn and Goat Cheese Flan

Corn and Goat Cheese Flan


Quantity Ingredients
8 ears sweet corn, kernels cut to make 4 cups
1/2 pound fresh goat cheese (8 oz. or 250g)
6 eggs
Salt and freshly ground black pepper to taste
Cayenne pepper, optional
Butter, as needed


1. Preheat oven to 325�F (160�C). 2. Butter six small souffl� dishes; set aside. Put kernels in food processor and pur�e. Crumble cheese over top and pur�e again. 3. Add eggs one at a time through the lid with machine running. Add seasonings and pur�e until blended. 4. Scoop mixture into prepared dishes. Bake for 20 to 30 minutes or until the center is set.
