|8 ears||sweet corn, kernels cut to make 4 cups|
|1/2 pound||fresh goat cheese (8 oz. or 250g)|
|Salt and freshly ground black pepper to taste|
|Cayenne pepper, optional|

1. Preheat oven to 325ï¿½F (160ï¿½C). 2. Butter six small soufflï¿½ dishes; set aside. Put kernels in food processor and purï¿½e. Crumble cheese over top and purï¿½e again. 3. Add eggs one at a time through the lid with machine running. Add seasonings and purï¿½e until blended. 4. Scoop mixture into prepared dishes. Bake for 20 to 30 minutes or until the center is set.
