| 3/4 cup | unsifted all-purpose flour |
| 2 tsp | baking powder |
| 1 tsp | granulated sugar |
| 1/2 tsp | salt |
| 1 | egg, lightly beaten |
| 1/2 cup | 1% milk |
| 2 cups | corn kernels (if using canned make sure they are drained) |
| vegetable oil for frying | |
| icing sugar |
Directions
1. In medium bowl, combine flour, baking powder, granulated sugar and salt. Mix well with fork; stir in egg, milk and corn until flour mixture is just moistened. 2. Over medium-high heat, in large skillet, heat 1/4-inch oil. Drop corn mixture by level teaspoonfuls into skillet. Cook 3 to 4 minutes on each side or until fritters are golden brown. 3. Drain well on a paper towel lined tray. Repeat with remaining corn mixture. 4. Dust fritters with icing sugar. Serve warm.
