Corn Fritters (Corn Oysters)


Quantity Ingredients
3/4 cup unsifted all-purpose flour
2 tsp baking powder
1 tsp granulated sugar
1/2 tsp salt
1 egg, lightly beaten
1/2 cup 1% milk
2 cups corn kernels (if using canned make sure they are drained)
vegetable oil for frying
icing sugar


1. In medium bowl, combine flour, baking powder, granulated sugar and salt. Mix well with fork; stir in egg, milk and corn until flour mixture is just moistened. 2. Over medium-high heat, in large skillet, heat 1/4-inch oil. Drop corn mixture by level teaspoonfuls into skillet. Cook 3 to 4 minutes on each side or until fritters are golden brown. 3. Drain well on a paper towel lined tray. Repeat with remaining corn mixture. 4. Dust fritters with icing sugar. Serve warm.
