|2 cups||unfiltered apple juice|
|1 cup||spring or filtered water|
|1/2 cup||raw almonds|
|1/4 tsp||sea salt|
|1 1/4 cups||dry whole wheat couscous|
|optional||toppings (see below)|
Bring juice and water to a boil. Add salt, couscous, cinnamon and almonds. Stir and turn heat to low. Simmer 5 to 10 minutes or until liquid is completely absorbed. Remove from heat. Stir in raisins and let sit, covered, for 10 minutes.
Rinse an 8x8 inch baking dish with water. Do not dry. Add the couscous mixture and pack it down. Place in refrigerator to cool. Cut into squares and serve as is or add toppings.
