Cranberry Apple Granola

Leslie's Featured Recipes.
My clients love this recipe. The ginger gives this granola extra zing. To reduce added sugars, subsitute dried cranberries with unsweetened dried cherries.

Cranberry Apple Granola

Ingredients

Quantity Ingredients
4 cups / 1 litre large-flake oats
1/4 cup / 50 ml slivered almonds
1/4 cup / 50 ml sunflower seeds
1/2 cup / 125 ml unsweetened applesauce
1/3 cup / 75 ml honey
2 tsp / 10 ml cinnamon
2 tsp / 10 ml canola oil
1/2 tsp / 2 ml ground ginger
1 cup / 250 ml dried apples, chopped
1/2 cup / 125 ml dried cranberries or cherries

Directions

Preheat oven to 375°F (190°C).

In a large mixing bowl, combine oats, almonds and sunflower seeds.

In a separate bowl combine applesauce, honey, cinnamon, oil and ginger. Pour over oat mixture and mix well, until coated evenly.

Evenly spread mixture on a baking sheet and bake for 15 to 20 minutes. Gently shake pan; bake an additional 5 to 10 minutes or until dry.

When granola is cool, toss with dried apples and cranberries.

Store in an airtight container.

Serves 18 (1/3 cup each).
