| 1/4 cup / 50 ml | freshly squeezed lime juice |
| 1 tsp / 5 ml | honey |
| 2 | cloves garlic, crushed |
| 1 tsp / 5 ml | grated fresh ginger |
| 1 tsp / 5 ml | each ground cumin and ground coriander |
| 1 tbsp / 15 ml | olive oil |
| 1 lb / 454 g | pork tenderloin |
Directions
In a shallow dish, combine the lime juice, honey, garlic, ginger, cumin, coriander and oil. Add pork, marinate for 30 minutes to 2 hours, turning once or twice.
Preheat grill to medium.
Transfer pork to the grill; cook for 20 to 22 minutes, or until cooked through.
Remove pork from the grill. Cover with foil and set aside to rest for 5 minutes before serving.
