|1/4 cup / 50 ml||freshly squeezed lime juice|
|1 tsp / 5 ml||honey|
|2||cloves garlic, crushed|
|1 tsp / 5 ml||grated fresh ginger|
|1 tsp / 5 ml||each ground cumin and ground coriander|
|1 tbsp / 15 ml||olive oil|
|1 lb / 454 g||pork tenderloin|
In a shallow dish, combine the lime juice, honey, garlic, ginger, cumin, coriander and oil. Add pork, marinate for 30 minutes to 2 hours, turning once or twice.
Preheat grill to medium.
Transfer pork to the grill; cook for 20 to 22 minutes, or until cooked through.
Remove pork from the grill. Cover with foil and set aside to rest for 5 minutes before serving.
