Easy Bake Pesto Salmon

This colourful dish in rich in heart-healthy omega-3 fats and requires next to no time to prepare. For the pesto, I suggest using Spinach Almond Pesto (page 370), but if you're pressed for time, a store-bought pesto will do just fine.

Easy Bake Pesto Salmon


Quantity Ingredients
4 4 oz/120 g salmon fillets
2 tbsp Spinach Almond Pesto; or store bought variety
4 lemon wedges


Preheat oven to 375 F (190 C).

Place fillets in a baking dish and spread ½ tbsp (7 ml) pesto on each fillet. Bake for 8 to 10 minutes or until fish flakes easily when tested with a fork.

Serve each fillet with a lemon wedge.

Serve 4.
