|1/2 cup||butter or margarine|
|1 cup||granulated sugar|
|2 tsp||fat free sour cream|
|1 tsp||baking soda|
|1 tsp||baking powder|
|2 cups||all-purpose flour|
|1 cup||fresh figs (overripe black Mission or Kadota are best)|
Preheat oven to 350 degrees F.
Peel figs of all stem and outside skin. In a small bowl, mash together.
In a large bowl, using an electric mixer, combine butter and sugar, salt and vanilla until light and fluffy. Add eggs and beat well. Add sour cream, baking soda and baking powder. Slowly sift in flour until all ingredients are combined.
Add figs and mix well. Pour batter into 9 x 13'' glass baking pan sprayed with cooking spray.
Bake for 45 minutes or until knife comes out clean from the centre of the cake. Let cool. Top with a fresh fig slice and serve.
Makes 1 cake or approximately 24 two-inch slices.
