Fruited Chicken Salad

This recipe from the Winona Peach Festival makes a quick and easy lunch. Serve in a whole-wheat pita or over fresh salad greens.

Fruited Chicken Salad


Quantity Ingredients
2 cups chicken, cooked, cubed
3/4 cup celery, sliced
3/4 cup seedless green grapes, sliced
3/4 cup fresh peeled and cubed peaches
1/2 cup light mayonnaise
1/2 cup light or fat-free sour cream
salt and pepper to taste


1. In a medium bowl, toss chicken, celery, grapes and peaches together. In a small bowl, combine mayonnaise and sour cream. 2. Pour mayonnaise mixture over the salad. Mix gently. Taste and adjust seasoning. Refrigerate until ready to serve. 3. Garnish with fresh sliced peaches, whole grapes, and parsley if desired.
