Goji Berry Wild Rice Salad


Quantity Ingredients
2 cups cooked wild rice
1/2 cup goji berries
6 cups spinach leaves
2 beets sliced and diced
1 cup kidney beans, rinsed, drained
1 cup cooked black beans or pinto beans, rinsed, drained
12 to 16 ounces grilled boneless, skinless chicken breast, sliced
1/4 cup coarsely chopped toasted pecan or walnut halves (optional)
Salt & pepper, to taste


Combine all ingredients in a large mixing bowl.  Drizzle with low fat dressing and toss to coat.  Serve immediately.
