Green Goddess Dip

Green Goddess Dip


Quantity Ingredients
1 cup packed sprigs of fresh flat-leaf (Italian) parsley
1/2 cup scallions, chopped (both green & white parts)
1/2 cup water
1 cup silken firm tofu, mashed
2 tbsp. lemonjuice, freshly squeezed
1 tbsp. extra-virgin olive oil
1 tsp. garlic, minced
1/2 tsp. granulated sugar
1/2 tsp. freshly ground black pepper


1. Place the parsley sprigs, scallions and water into a small saucepan. Cover and bring to boil over medium heat; simmer until scallions are tender and the parsley is wilted, about 2 minutes. Drain well. 2. Transfer the cooked scallions and parsley to a food processor. Add remaining ingredients and process until smooth. Adjust seasonings to taste. 3. Refrigerate in covered container for at least 30 minutes before serving.
