1 cup | packed sprigs of fresh flat-leaf (Italian) parsley |
1/2 cup | scallions, chopped (both green & white parts) |
1/2 cup | water |
1 cup | silken firm tofu, mashed |
2 tbsp. | lemonjuice, freshly squeezed |
1 tbsp. | extra-virgin olive oil |
1 tsp. | garlic, minced |
1/2 tsp. | granulated sugar |
1/2 tsp. | freshly ground black pepper |
Directions
1. Place the parsley sprigs, scallions and water into a small saucepan. Cover and bring to boil over medium heat; simmer until scallions are tender and the parsley is wilted, about 2 minutes. Drain well. 2. Transfer the cooked scallions and parsley to a food processor. Add remaining ingredients and process until smooth. Adjust seasonings to taste. 3. Refrigerate in covered container for at least 30 minutes before serving.
