Grilled Bread and Cherry Tomato Salad

Everyone seems to have leftover bread, and it's a shame to waste it. Tuscan cooks use up leftover bread in salads, and as unusual as it sounds, it is really delicious. Use red or yellow cherry tomatoes, or a combination, in this recipe.

Grilled Bread and Cherry Tomato Salad

Ingredients

Quantity Ingredients
1 small clove garlic, minced
1/3 cup balsamic vinegar
1 1/2 tbspolive oil
1/4 tsppepper
2 tbspchopped fresh chives or green onions
1/3 cup chopped fresh basil or parsley
6 slices French or Italian bread, about 3/4-inch thick
4 cups cherry tomatoes, halved

Directions

1. In small bowl, whisk together garlic, vinegar, oil, pepper and salt. Stir in chives and basil. Reserve.2. Barbecue or toast bread. Cut each slice into 1 1/2-inch pieces.3. Toss bread with cherry tomatoes and dressing. Taste and adjust seasonings if necessary.
