|1 lb||ground venison|
|2 tbsp||vegetable oil|
|1 small||onion, diced|
|1 can||small jalapeno peppers, diced|
|1 lb||cheddar cheese, mild or sharp|
In a large saucepan, brown ground venison in vegetable oil with onion and season to taste with salt and pepper. Pour off any excess fat.
Break eggs and add diced jalapenos. Stir over medium heat until eggs are nearly cooked. Sprinkle cheese over top. Remove from heat and let sit for 2-3 minutes.
Serve with salsa or sour cream.
