|1/2 cup||shelled hemp seed|
|1 pound||salmon fillet, cut into 4 pieces|
|1/2 cup||fat-free mayonnaise|
|1/2 tsp||minced fresh or dried tarragon|
|1/2 tsp||orange zest|
|1/8 tsp||ground black pepper|
Preheat oven to 350 degrees F (176 degrees C). Brush a baking sheet with olive oil.
Arrange salmon on the baking sheet and spread with equal amounts mayonnaise. Top with shelled hemp seed and sprinkle with tarragon, orange zest, salt and pepper.
Bake 15 minutes in the preheated oven, or until fish flakes easily with a fork.
