1 1/2 lb | halibut or monkfish fillets |
2 tsp | grated lemon rind |
1/4 cup | lemon juice |
2 tbsp | chopped fresh dill |
1 tbsp | vegetable oil |
2 | cloves garlic, minced |
1/4 tsp | each salt and pepper |
Directions
Cut fillets into 1-inch (2.5 cm) chunks; place in bowl. Whisk together lemon rind and juice, dill, oil, garlic, salt and pepper; pour over fish and toss gently to coat . Thread onto eight 8-inch (20 cm) metal skewers. Place on greased grill over medium-high heat or under broiler; close lid and cook, turning once, for about 5 minutes or until fish is opaque and flakes easily when tested with fork. Serves 4
