Lemon Pizza

This is an elegant, sophisticated and unusual appetizer. It is a fun twist on pizza that adults will enjoy. Small cooked shrimp can be substituted for the smoked salmon.

Lemon Pizza


Quantity Ingredients
1/2 cup light sour cream
1/2 cup heavy cream
1 prepared and prebaked pizza crust with herbs and cheese
2 lemons, sliced paper-thin, seeds removed
2 tbsp olive oil
pinch freshly ground black pepper to taste
6 oz. cold-smokedsalmon, cut into thin strips
2 tbsp capers, drained
fresh dill for garnish


1. In small bowl, combine sour cream and heavy cream. Cover and leave at room temperature for 1 hour. 2. Place prepared pizza crust on pizza stone or baking sheet. Leaving 1 inch crust, cover remaining surface with single layer of lemon slices. 3. Drizzle olive oil over lemon slices; sprinkle with pepper. Bake at 450F for 10 minutes. Lemon slices should start to crisp but not char. 4. Remove from oven and let cool for 5 minutes. Spread cream mixture carefully over lemon slices. 5. Arrange smoked salmon over cream, in a pinwheel pattern. Sprinkle with capers; garnish with fresh dill. Makes 12 servings.
