Maple Mashed Sweet Potatoes

So simple, yet so delicious. I'm convinced orange zest and sweet potatoes were meant to be paired together, and I think you'll agree after tasting this dish.  For a lower sugar version, substitute the maple syrup with orange juice.

Maple Mashed Sweet Potatoes

Ingredients

Quantity Ingredients
2 large sweet potatoes, peeled and quartered
2 tsp / 10 ml canola oil
2 tbsp / 25 ml maple syrup
Amount zest of 1/2 an orange

Directions

Preheat oven to 375ºF (190ºC).

In a bowl, toss the sweet potatoes with oil to coat. Transfer to a baking sheet. Bake for 45 minutes or until tender.

Transfer potatoes to large bowl. Add maple syrup and orange zest.  With a potato masher, mash potatoes to a smooth consistency.

Serves 4.

Per 1 cup (250 ml) serving: 92 calories, 1 g protein, 1 g total fat (0 g saturated fat), 20 g carbohydrate, 2 g fibre, 0 mg cholesterol, 37 mg sodium
