|2 tsp / 10 ml||canola oil|
|2 tbsp / 25 ml||maple syrup|
|Amount||zest of 1/2 an orange|
Preheat oven to 375ºF (190ºC).
In a bowl, toss the sweet potatoes with oil to coat. Transfer to a baking sheet. Bake for 45 minutes or until tender.
Transfer potatoes to large bowl. Add maple syrup and orange zest. With a potato masher, mash potatoes to a smooth consistency.
Per 1 cup (250 ml) serving: 92 calories, 1 g protein, 1 g total fat (0 g saturated fat), 20 g carbohydrate, 2 g fibre, 0 mg cholesterol, 37 mg sodium
Excellent source of beta-carotene.
