Marbled Chocolate Banana Bread

Breakfast, Snacks.
This recipe is a hit with kids - and adults, too! If you have bananas starting to turn brown, peel them and pop them into a resealable freezer bag and then into the freezer. They're ready to use when you want to make this recipe!

Marbled Chocolate Banana Bread

Ingredients

Quantity Ingredients
1 cup / 250 ml all-purpose flour
1/2 cup / 125 ml whole wheat flour
1 tsp / 5 ml baking powder
1 tsp / 5 ml baking soda
3/4 cup / 175 ml granulated sugar
1/4 cup / 50 ml canola oil
1 tbsp / 15 ml milk or soy milk
2 large eggs
1 cup / 250 ml mashed banana, about 2 medium
1 tbsp / 25 ml cocoa powder

Directions

Preheat oven to 350 degrees F (180 degrees C).

Grease and flour a 9x5 inch (2L) loaf pan.

In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder and baking soda.

In a separate bowl, whisk together sugar, oil, milk, eggs and mashed banana.

Add banana mixture to flour mixture; whisk togther until combined.

Remove 1/4 cup (50 ml) of the batter and mix with cocoa powder in a small bowl. Set aside.

Pour the batter into the prepared loaf pan.

Drizzle the cocoa mixture over the batter in the pan, and then drag a knife through the batter to create a marbled effect.

Bake for 40 to 45 minutes or until cooked through (when a knife inserted in the centre comes out clean).

Makes 12 servings (3/4-inch / 2 cm slices)
