Marbled Chocolate Banana Bread

If you have bananas that are starting to go brown, peel them and pop them in a resealable freezer bag.  Keep them frozen until you're ready to use them, then simply take them out and mash them with a back of a fork for this recipe.

Marbled Chocolate Banana Bread


Quantity Ingredients
1 3/4 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup white sugar
1/4 cup canola oil
2 eggs
1 cup mashed banana
2 tbsp cocoa powder
1 tbsp ground flaxseed


Preheat oven to 350°F (180°C).

Grease and flour a 9x5 loaf pan.

In a large mixing bowl, combine flour, baking powder, baking soda and sugar.

In a separate bowl, whisk together oil, eggs and mashed banana.

Add banana mixture to flour mixture and mix until just combined.  Remove 1/4 cup of the batter and set aside.

Pour the batter into the prepared loaf pan.

Mix the reserved 1/4 cup batter with the cocoa powder.  Drizzle over the batter in the pan, and then drag a knife through the batter for a marble effect. 

Sprinkle loaf with ground flaxseed.

Bake for 40 to 45 minutes, or until cooked through (when a knife inserted in the centre comes out clean).

Serves 12.
