Miso-Glazed Trout

Trout, an excellent source of omega-3 fatty acids, has become a favoutite of mine. I serve it as an alternative to salmon.  If you don't want the hassle of peeling and chopping fresh ginger root, use pureed ginger (sold in jars) - it works really well in this recipe, giving the sauce a thick consistency and creamy texture.

Miso-Glazed Trout

Ingredients

Quantity Ingredients
4 4 oz/120 g trout fillets
4 tsp chopped ginger root
4 tsp frozen orange juice concentrate
2 tsp miso paste (yellow or white)
1 tbsp chopped fresh chives

Directions

Preheat oven to 400 F (200 C).

Arrange fillets on a baking sheet lightly lined with parchment paper and bake for 10 to 14 minutes or until fish is cooked through and flakes easily when tested with a fork.

Meanwhile, in a small bowl, whisk together ginger root, orange juice concentrate and miso. Pour sauce over cooked fillets; sprinkle with chives.

Serves 4.

Nutrition information per fillet: 151 calories; 24 grams protein, 4 grams total fat (1 g saturated), 3 grams carb; 0 g fibre; 65 mg cholesterol; 135 mg sodium

Tip: The miso sauce can double as a salad dressing.
