Mixed Berry Salad

This simple salad is at it's best when fresh local berries are available and plentiful.  Berries are rich in antioxidants and vitamin C, and are a source of fibre.

Mixed Berry Salad

Ingredients

Quantity Ingredients
2 tbsp balsamic vinegar
2 tbsp brown sugar
2 oranges, peeled and sectioned
2 cups strawberries, sliced
a few sprigs fresh mint

Directions

In a large bowl, whisk together balsamic vinegar and sugar. 

Gently toss oranges and strawberries with balsamic vinegar and sugar mixture. 

Cover and refrigerate for at least 2 hours to allow flavours to blend. 

Garnish with mint, serve chilled.

Serves 4.
