Mori-Nu ''Lite'' Eggless Egg Salad


Quantity Ingredients
1 pkg (12.3 oz) Mori-Nu Lite Firm Tofu, drained
1 tsp. each, apple cider vinegar and honey
2 tsp. mustard
1/2 tsp. turmeric
2 tbsp. each, diced celery and onion
1 tsp. parsley, chopped
Dash of paprika
Pepper to taste


1. Crumble tofu into a small bowl. In a separate bowl, combine vinegar, mustard, honey and turmeric. Mix thoroughly and pour over crumbled tofu. 2. Add celery, onion, parsley, paprika and pepper. Mix thoroughly. 3. Refrigerate for about 30 minutes to allow flavours to meld.
