|1 cup / 250 ml||100% pure orange juice|
|1 cup / 250 ml||1% or skim milk OR unsweetened soy milk|
|1 tsp / 5 ml||grated or minced fresh ginger root|
|1 cup / 250 ml||mixed fresh or frozen berries, such as strawberries, blueberries, raspberries|
In a blender, combine orange juice, milk, ginger root and berries. Puree until smooth. Serve cold.
Per 1.5 cup (375 ml) serving: 148 calories, 2 g total fat (1 g saturated fat), 30 g carbohydrate, 2 g fibre, 6 mg cholesterol, 60 mg sodium.
Excellent source of vitamin C, potassium and anthocyanins (antioxidants in berries).
Tip: Turn this into a healthy protein shake: use unsweetened almond milk in place of milk/soy milk and add one scoop of vegan protein powder or whey protein powder.
