1 package | plus 3/4 tsp unflavored gelatin |
1/4 tsp | almond extract |
1 ounce (1 square) | semisweet chocolate, grated |
1/4 cup | dry-roasted salted peanuts, coarsely chopped |
Directions
1. In a medium saucepan, bring 3 cups of soy milk, brown sugar, peanut butter, sesame oil and salt to a simmer over medium heat.
2. Meanwhile, in a measuring cup, sprinkle gelatin over remaining 1 cup soy milk. Let stand five minutes or until softened. Stir softened gelatin into soy mixture and cook one minute or until gelatin has dissolved. Remove from heat, stir in almond extract.
3. Pour into six 6-ounce custard cups, cool to room temperature, then refrigerate until set, about four hours. Just before serving sprinkle chocolate and peanuts on top.
