Peanut Pudding with Shaved Chocolate

This delicious pudding is made from soy milk. It tastes like a favorite candy! 

Peanut Pudding with Shaved Chocolate


Quantity Ingredients
4 cups unflavored soy milk
1/2 cup firmly packed light brown sugar
3 tbsp creamy peanut butter
1/2 tsp dark sesame oil
1/4 tsp salt
1 package plus 3/4 tsp unflavored gelatin
1/4 tsp almond extract
1 ounce (1 square) semisweet chocolate, grated
1/4 cup dry-roasted salted peanuts, coarsely chopped


1. In a medium saucepan, bring 3 cups of soy milk, brown sugar, peanut butter, sesame oil and salt to a simmer over medium heat. 2. Meanwhile, in a measuring cup, sprinkle gelatin over remaining 1 cup soy milk. Let stand five minutes or until softened. Stir softened gelatin into soy mixture and cook one minute or until gelatin has dissolved. Remove from heat, stir in almond extract. 3. Pour into six 6-ounce custard cups, cool to room temperature, then refrigerate until set, about four hours. Just before serving sprinkle chocolate and peanuts on top. Nutrition Information Per Serving: 262 calories, 11g total fat, 2.4g saturated fat, 1.1g dietary fibre, 0mg cholesterol, 253mg sodium.
