Roasted Ginger Carrots


Quantity Ingredients
2 tbsp (25 mL) sesame oil
1 tsp (5 mL) grated gingerroot OR
1/2 tsp (2 mL) dried ginger
1/4 tsp (1 mL) each salt and pepper
6 cups (1.5 kg) thinly sliced carrots
2 tbsp (25 mL) chopped fresh parsley


1. In large bowl, combine oil, ginger, salt and pepper. Add carrots; toss gently. Transfer to 8-inch (2 L) square glass baking dish. Bake in 425�F (220�C) oven, stirring occasionally, until tender, 20 to 25 minutes. Sprinkle with parsley. Makes 4 servings. Nutritional information Per serving: about 137 cal, 2 g pro, 7 g total fat (1g sat. fat), 18 g carb, 5 g fibre, 0 mg chol, 255 mg sodium. % RDI: 5% calcium, 9% iron, 414% vit A, 10% vit C, 12% folate.
