| 1 lb. | fresh tilapia fillets, cut into cubes |
| 1 tbsp. | olive oil |
| 1 | large onion, chopped |
| 2 | cloves garlic, minced |
| 1 | red bell pepper, seeded and chopped |
| 1 cup | zucchini, chopped |
| 4 | small red potatoes, cubed |
| 2 | carrots, cleaned and cut into cubes |
| 1 tsp. | fresh thyme, chopped |
| 1 tsp. | fresh parsley, chopped |
| 1 lb. | Roma tomatoes, chopped with juice reserved |
| 1 cup | clam juice |
| 1 cup | dry white wine |
Directions
1. Heat oil in a non-stick skillet over medium heat. Saut� onion and garlic in olive oil until tender. Add bell pepper, zucchini, potatoes, carrots, thyme, parsley and salt and pepper to taste. Saut� another 5 minutes. 2. Stir in tomatoes with their juice, clam juice and white wine. Bring to a boil. Reduce heat to low and simmer for an additional 5 minutes. 3. Add fish fillets and simmer for 5 minutes until fish flakes easily with a fork. Serve with crusty bread.
