| 2 to 3 | drops hot pepper sauce (optional) |

| 1/4 tsp | ground white pepper |
| 2-1/2 cups | cooked rice (cooked in chicken broth and 1/8 teaspoon saffron) |

| 1/2 cup | diced red bell pepper |
| 1/2 cup | diced green bell pepper |
| 1/4 cup | sliced green onion |
| 1/4 cup | sliced black olives |
| Lettuce leaves |
Directions
1. In a large bowl, combine vinegar, olive oil, hot pepper sauce (if using), garlic and white pepper. Mix well. 2. Add rice, peppers, onions and olives; toss lightly until combined. Serve on fresh lettuce leaves. Note: Ground turmeric can be substituted for the saffron, if desired.
