Sardine Bread

This recipe is adapted from Norway's King Oscar sardines, so the measurements are a little unusual, but how could we pass up sardine bread?

Sardine Bread


Quantity Ingredients
300 mL lukewarm water
3 tbsp soybean oil
25 g yeast
1 tsp salt
500 g flour
2 cans sardines, any flavour, chopped
4 eggs
1/2 leek, chopped
1/2 each yellow, green and red peppers, chopped
salt and pepper, to taste
2 tbsp water


Mix dough ingredients and let rest for 30 min. While dough is resting, prepare filling: Mix eggs, leek, pepper, spices and water. Fry egg mixture in a frying pan as you would scrambled eggs. 

When dough has rested, preheat oven to 425F. Work the dough and roll it out to around 1 cm thick. Spread filling on dough and sprinkle with chopped sardines. Roll dough into log shape. Place on cookie sheet and shape into a circle. Bake for approximately 30 min.
