Sauteed Tilapia with Spring Vegetables


Quantity Ingredients
1 lb. fresh tilapia fillets
1/2 lb. fresh asparagus, cleaned and cut into spears
1 chopped fresh tomato
1 bulb of roasted garlic
1 tsp. fresh chopped parsley
salt & pepper to taste
juice of 1 lemon
lemon zest
1 cup white wine
1 tsp. butter
1 tbsp. olive oil


1. Heat olive oil in a skillet over medium-high heat. Dredge tilapia in flour and add to skillet, browning on one side. 2. After tilapia is browned turn fish and add asparagus, tomatoes, roasted garlic, fresh parsley, salt, pepper, lemon juice and zest and white wine. Bring juices to a boil then reduce heat and simmer covered for 5 minutes or until asparagus is tender. Serve over pasta or basmati rice.
