Strawberry Almond Granola Parfait

Snacks.
The granola in this recipe uses a fraction of the oil and sugar you'll find in store-bought brands.  While this parfait is delicious for breakfast, it also doubles as a healthy mid-day snack.

Strawberry Almond Granola Parfait

Ingredients

Granola
1/4 cup / 50 ml sliced almonds
1 tbsp / 15 ml ground flaxseed
1/4 tsp / 1 ml almond extract
1/2 cup / 125 ml rolled oats
1 tbsp / 15 ml canola oil
1/2 tbsp / 1.5 ml maple syrup
1 tbsp / 15 ml freshly squeezed orange juice
Parfait
3 cups / 750 ml plain yogurt (1% MF or less)
2 cups / 500 ml sliced strawberries

Directions

Preheat oven to 350°F (180°C).

In a large mixing bowl, toss together oats, almonds and flaxseed.  Add almond extract, oil, maple syrup and orange juice.  Stir together until dry ingredients are evenly coated with orange juice mixture and they begin to clump together.

Spread oat mixture evenly across a large baking sheet.  Placethe sheet in the oven on middle rack and bake the mixture for 10 to 12 minutes, or until it begins to brown.  Remove from oven; let granola cool on the baking sheet.

To make parfait, scoop ¾ cup yogurt into four bowls, top each bowl with ½ cup sliced strawberries.  Sprinkle with ¼ cup granola mixture. Garnish with fresh mint leaves if desired.

Serve immediately.
