Strawberry and Kiwi Salad

This is a colourful salad that combines bright red strawberries with vibrant green kiwi fruit.  I suggest finely chopping the mint and mixing it in with the fruit, ut you can also use whole mint leaves for a garnish.

Strawberry and Kiwi Salad

Ingredients

Quantity Ingredients
2 cups strawberries, sliced
2 kiwi, peeled and sliced
2 tbsp fresh mint, finely chopped
Dressing:
1 cup low fat yogurt
1 tbsp frozen orange juice concentrate
1 tsp poppy seeds

Directions

In a bowl, combine strawberries, kiwi and mint.

In a separate bowl, combine yogurt, orange juice concentrate and poppy seeds.

Drizzle dressing over strawberries - serve immediately.

Serves 4.
