Sweet Potato Bisque

Sweet Potato Bisque


Quantity Ingredients
2 medium sweet potatoes, peeled and cubed (about 3 cups)
1 medium onion, chopped
1 small clove garlic
1/2 tsp salt
1/4 tsp chili powder
1/4 tsp ground cumin
1/8 tsp black pepper
2 cans (14-1/2 oz. each) chicken broth
1-1/3 cups 1% milk
1/4 cup salsa
green onion sprigs


1. In large saucepan, combine sweet potatoes, onion, garlic, salt, chili powder, cumin, pepper and chicken broth. 2. Bring to a boil; reduce heat and simmer 10 minutes or until sweet potatoes are tender. 3. Carefully puree in blender or food processor until smooth. Return to saucepan; add milk and heat through. 4. Serve garnished with salsa and green onion sprigs. Nutrition Information per serving: 120 calories, 4g total fat, 8.4 mg cholesterol, 81 mg calcium.
